High-Fiber High-Protein Overnight Buns

(Makes 7-8 buns)


Ingredients:

  • 250g Manitoba Harvest Instant Superseed Oatmeal (five packs)
  • 1 cup / 100g rolled oats
  • 4 large eggs, preferably organic
  • 1 1/2 cup / 350g cottage cheese, preferably grass-fed
  • 1 tsp. fine sea salt
  • 2 tsp. garlic powder
  • 1 tsp. onion powder
  • 2 tsp. baking powder
  • Everything bagel spice, for garnish if desired


Directions:
1. In a large bowl, combine the Manitoba Harvest Instant Superseed Oatmeal with rolled
oats. Set aside.
2. Crack eggs into a blender (an immersion blender in a bowl also works). Add cottage
cheese, salt, garlic and onion powders, and blend until smooth.
3. Pour this liquid over the oat mixture and stir very well, until everything is evenly
combined. Cover, and place in the fridge overnight.
4. The next morning, preheat your oven to 400°F / 200°C. Remove the dough from the
fridge and stir in the baking powder.
5. Line two rimmed baking sheets with parchment. Divide the dough into seven or eight
portions, roll into balls, flatten into discs, then place on the lined baking sheet.
6. Sprinkle generously with everything bagel spice, bake for 30 minutes. Remove from oven, let cool on wire racks, and enjoy.
