Holiday Clementine Salad
Makes: 6 servings
Ingredients
Salad:
- 5 clementine oranges, peeled
- 2 avocados, sliced
- 1.5 cups red radicchio (approx. 1 small head)
- 4 tablespoons pumpkin seeds
- 4 tablespoons pomegranate seeds
- 6 cups baby spinach
- 1 cup fennel, finely chopped
- 1 cup mint leaves, freshly chopped
Dressing:
- 2 tbsp hemp or olive oil
- 1/2 cup fresh clementine orange juice
- 1 tbsp purple onion, finely chopped
- 1/4 tsp of grey or pink sea salt
- 1/2 tsp organic orange or lemon peel, finely grated
Garnish: 1/4 cup hemp hearts (shelled hemp seed)
Directions
- Combine salad ingredients in large bowl.
- Combine dressing ingredients in a small bowl or mason jar.
- Mix both together and garnish with hemp seeds.
