Cinnamon Apple Oat Bread


  • 3/4 old fashioned oats, dry
  • 1 large apple, chopped into small pieces
  • 1/2 brick of organic butter, melted
  • 1 1/3 cup applesauce
  • 1 tbsp vanilla extract
  • 2 cup whole wheat flour (or flour subsititue of your choice)
  • 4 tbsp Manitoba Harvest HempPro Fibre
  • 1 1/2 cup organic cane sugar (or coconut palm sugar)
  • 1 tsp salt
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp ground clove
  • 1/2 tsp ground nutmeg
  • 2 eggs, lightly beaten


Preheat oven to 350 degrees F.

Cook oatmeal with water, either in microwave or on the stove top.

In a medium sized mixing bowl, combine oatmeal, apples, butter, applesauce, and vanilla extract. Set aside.

In a large mixing bowl combine dry ingredients. Add oatmeal mixture until just mixed. Stir in eggs.

Use a loaf pan and cook for about 35-40 minutes. Use a toothpick to see when it's ready to eat.

Chef's Notes

Can also be made as muffins. If you are making these as muffins bake for 25 minutes. 

Yield: 18 muffins
