Apple Cinnamon Oatmeal Hemp Muffins
- 3/4 old fashioned oats, dry
- 1 1/2 c. water
- 1 large apple, chopped into small pieces
- 1/2 c. (1 stick) butter, melted
- 1 1/3 c. applesauce
- 1 tbsp vanilla extract
- 2 c. flour
- 4 tbsp Manitoba Harvest Pro Fiber powder
- 1 1/2 c. brown sugar
- 1 tsp salt
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp ground cinnamon
- 1/2 tsp ground clove
- 1/2 tsp ground nutmeg
- 2 eggs, lightly beaten
Preheat oven to 350 degrees F.
Cook oatmeal with water, either in microwave or on the stove top.
In a medium sized mixing bowl, combine oatmeal, apples, butter, applesauce, and vanilla extract. Set aside.
In a large mixing bowl combine dry ingredients. Add oatmeal mixture until just mixed. Stir in eggs.
Use paper cups or grease muffin tins. Use about 1/2 cup batter per muffin and cook until toothpick comes out clean, about 15-18 mins.
Makes about 18 muffins.
