Apple Hemp Cinnamon Loaf

Ingredients

For the hemp seed icing swirl

For the apples

  • 1 1/2 cups chopped Honeycrisp or Pink Lady apples, 1/2 inch pieces
  • 1/4 cup packed brown sugar
  • 1 1/2 tsp ground cinnamon

For the loaf

  • 2 cups all purpose flour
  • 3/4 cup granulated sugar
  • 1/2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 3/4 tsp ground cinnamon
  • 1/4 tsp nutmeg
  • 2 tsp vanilla extract
  • 1 egg
  • 2/3 cup whole milk
  • 1/3 cup unsweetened applesauce
  • 1/3 cup melted butter (melt then let cool a bit before adding to the batter)

Instructions 

  1. Preheat the oven to 350F.
  2. Line a loaf pan with parchment paper and then grease with softened butter or spray with vegetable oil.

For the hemp seed icing swirl

  1. Combine hemp seeds, lemon juice and water in a small food processor or high speed blender. Pulse until combined and add in icing sugar 1/4 cup at a time to combine - this will get quite thick so scrape down the food processor as needed. A creamy mixture will start to form. Once combined, add in 1 tsp vanilla, pulse a few more times and then set aside.

For the apples

  1. Mix the chopped apples together with brown sugar and ground cinnamon. Set aside.

For the loaf

  1. In a large mixing bowl, whisk together flour, sugar, baking powder, baking soda, salt, cinnamon and nutmeg.
  2. In a small mixing bowl, whisk together vanilla extract, egg, whole milk, applesauce and melted butter.
  3. Add the wet ingredients into the dry ingredients. Using a spoon, stir the batter together - it will be quite thick.
  4. Gently stir in the apples until just combined.
  5. Add about half of the loaf batter into the pan. Then scoop in the hemp seed icing mixture over the batter.  Using a butter knife, swirl the hemp seed icing through the loaf batter mixture.
  6. Pour the rest of the loaf batter over the hemp seed icing layer and smooth the top.
  7. Bake at 350F for 60-70 minutes or until a toothpick inserted into the middle comes out mostly clean. Remove from the pan and allow to cool completely on a baking rack before slicing and serving.
