Ingredients
- 1.5 cups gluten-free baking flour
- ½ cup sugar (coconut sugar)
- 2 tsp. baking soda
- Pinch of sea salt
- 1 cup unsweetened non-dairy milk
- 3 tsp. fresh lemon juice
- 1/3 cup coconut oil
- 2 eggs
- Blueberry Superseed Granola, 3-pack – Manitoba Harvest
- Fresh blueberries (Optional)
Instructions
- Preheat the oven 350°F.
- Add all ingredients to a high speed blender; blend until combined.
- Pour into a greased muffin tin.
- Bake for 20 min, top with Superseed Granola and blueberries, bake 15 min more.
- Cool on rack.
