Hemp Heart Pesto Pasta

Directions:

  1. Prepare the Pesto:
    In a high-speed blender or food processor, combine the hemp seeds, spinach, basil, shallot, olives, garlic, olive oil, water, and a pinch of sea salt.
    • Blend: Process until smooth and creamy. If the pesto is too thick, gradually add more water until you reach your desired consistency. Taste and adjust salt if needed.
  2. Cook the Pasta:
    Bring a large pot of salted water to a boil.
    • Add your choice of pasta and cook according to the package instructions until al dente.
    • Reserve about 1/4 cup of pasta water, then drain the pasta.
  3. Assemble the Dish:
    Return the drained pasta to the pot (or a large mixing bowl).
    • Add the hemp seed pesto to the warm pasta.
    • Toss well to ensure every strand or piece is evenly coated.
  4. Serve:
    Plate the pesto pasta in bowls.
    • Garnish with a sprinkle of extra hemp seeds for added texture and nutrition.
