Hemp Heart Pesto Pasta

In a high-speed blender or food processor, combine the hemp seeds, spinach, basil, shallot, olives, garlic, olive oil, water, and a pinch of sea salt.- Blend: Process until smooth and creamy. If the pesto is too thick, gradually add more water until you reach your desired consistency. Taste and adjust salt if needed.

Cook the Pasta:
Bring a large pot of salted water to a boil.- Add your choice of pasta and cook according to the package instructions until al dente.
- Reserve about 1/4 cup of pasta water, then drain the pasta.

Assemble the Dish:
Return the drained pasta to the pot (or a large mixing bowl).- Add the hemp seed pesto to the warm pasta.
- Toss well to ensure every strand or piece is evenly coated.

Plate the pesto pasta in bowls.- Garnish with a sprinkle of extra hemp seeds for added texture and nutrition.
