Hemp Matcha Lime Cookies
Serving Size: about 20 cookies
Ingredients
- 113g ½ cup (1 stick) unsalted butter, room temperature
- 200g + 12.5g 1 cup + 1 Tbsp granulated sugar, divided
- 1 large egg
- 1 large egg yolk
- 46g 3 Tbsp fresh lime juice
- 12g 4 tsp lime zest
- 167g 1 1/3 cups all-purpose flour
- 78g 2/3 cup Manitoba Harvest Hemp + Matcha
- 2.4g ½ tsp baking powder
- 1.5g ¼ tsp baking soda
- 1.5g ¼ tsp salt
- 2-3 drops green food coloring (optional)
- 40g ⅓ cup confectioners’ sugar
Instructions
1. Preheat oven to 325ºF and line two baking sheets with parchment paper or silicone mats.
2. In the bowl of a stand mixer or in a large bowl with a hand mixer, cream together butter and 1 cup sugar until light and fluffy, 2-3 minutes.
3.A dd egg, egg yolk, lime juice, and lime zest and mix until just combined.
4. In a separate large bowl, whisk together flour, the Hemp + Matcha, baking powder, baking soda, and salt.
5. Pour dry ingredients into wet mixture and mix until just combined, taking care not to over-mix. Fold in green food coloring until well combined, if desired.
6. Place remaining granulated sugar in a small bowl and place confectioners’ sugar in a separate small bowl. Using about 2 tablespoons (#30 scoop) of dough at a time, roll dough into balls. Roll each ball in the granulated sugar, followed by confectioners’ sugar. Place on prepared baking sheets about 2 inches apart.
7. Bake cookies for 15-17 minutes, until set. They should still be soft. Let cookies cool on pan for 5 minutes before moving to a rack to cool completely.
