High-Fiber High-Protein Overnight Buns

(Makes 7-8 buns)

Ingredients:

  • 250g Manitoba Harvest Instant Superseed Oatmeal
  • 1 cup / 100g rolled oats
  • 4 large eggs, preferably organic
  • 1 1/2 cup / 350g cottage cheese, preferably grass-fed
  • 1 tsp. fine sea salt
  • 2 tsp. garlic powder
  • 1 tsp. onion powder
  • 2 tsp. baking powder
  • Everything bagel spice, for garnish if desired

Instructions:

  • In a large bowl, combine the Superseed Oatmeal with rolled oats. Set aside.
  • Crack eggs into a blender. Add cottage cheese, salt, garlic and onion powders, and blend until smooth.
  • Pour over the oat mixture and stir until evenly combined. Cover, place in the fridge overnight.
  • Next morning, preheat the oven to 400°F / 200°C. Stir in the baking powder.
  • Line two baking sheets with parchment. Divide dough into 7-8 portions, roll into balls, flatten into discs.
  • Sprinkle with everything bagel spice, bake for 30 minutes. Cool on wire racks.
