High-Fiber High-Protein Overnight Buns
(Makes 7-8 buns)
Ingredients:
- 250g Manitoba Harvest Instant Superseed Oatmeal (five packs)
- 1 cup / 100g rolled oats
- 4 large eggs, preferably organic
- 1 1/2 cup / 350g cottage cheese, preferably grass-fed
- 1 tsp. fine sea salt
- 2 tsp. garlic powder
- 1 tsp. onion powder
- 2 tsp. baking powder
- Everything bagel spice, for garnish if desired
Directions:
- In a large bowl, combine the Manitoba Harvest Instant Superseed Oatmeal with rolled oats. Set aside.
- Crack eggs into a blender (an immersion blender in a bowl also works). Add cottage cheese, salt, garlic and onion powders, and blend until smooth.
- Pour this liquid over the oat mixture and stir very well, until everything is evenly
combined. - Cover, and place in the fridge overnight.
- The next morning, preheat your oven to 400°F / 200°C. Remove the dough from the fridge and stir in the baking powder.
- Line two rimmed baking sheets with parchment. Divide the dough into seven or eight portions, roll into balls, flatten into discs, then place on the lined baking sheet.
- Sprinkle generously with everything bagel spice, bake for 30 minutes. Remove from oven, let cool on wire racks.
