
High-Fiber High-Protein Overnight Buns
(Makes 7-8 buns)
Ingredients:
- 250g Manitoba Harvest Instant Superseed Oatmeal
- 1 cup / 100g rolled oats
- 4 large eggs, preferably organic
- 1 1/2 cup / 350g cottage cheese, preferably grass-fed
- 1 tsp. fine sea salt
- 2 tsp. garlic powder
- 1 tsp. onion powder
- 2 tsp. baking powder
- Everything bagel spice, for garnish if desired
Instructions:
- In a large bowl, combine the Superseed Oatmeal with rolled oats. Set aside.
- Crack eggs into a blender. Add cottage cheese, salt, garlic and onion powders, and blend until smooth.
- Pour over the oat mixture and stir until evenly combined. Cover, place in the fridge overnight.
- Next morning, preheat the oven to 400°F / 200°C. Stir in the baking powder.
- Line two baking sheets with parchment. Divide dough into 7-8 portions, roll into balls, flatten into discs.
- Sprinkle with everything bagel spice, bake for 30 minutes. Cool on wire racks.
