Pumpkin Hemp Soup

Servings: 3-4 Servings

Ingredients

  • 2 1/4 cups pumpkin puree
  • 1 tbsp. olive oil
  • 2 shallots, diced
  • 3 cloves garlic, minced
  • 2 cups vegetable stock
  • 1 cup coconut milk 
  • 2 tbsp. maple syrup
  • 1/2 cup Organic Hemp Hearts – Manitoba Harvest
  • 1/4 tsp. sea salt
  • 1/4 tsp. black pepper

Instructions

  • Cook olive oil, shallots and garlic over medium heat until translucent.
  • Add pumpkin, stock, coconut milk, maple syrup; simmer.
  • Blend with hemp hearts, salt, pepper.
  • Return to pot; heat 5-10 min.
  • Garnish with hemp hearts, chives, and coconut milk.
