Serves 4
Tofu ‘Bacon Bits’ Ingredients:
- 175g firm tofu, ½ pack, crumbled
- 3 tbsp. maple syrup
- 2 tbsp. cornstarch
- 1 tbsp. olive oil
- 2 tsp. Worcestershire sauce
- 2 tsp. liquid smoke
- 2 tsp. garlic powder
- 2 tsp. minced onion
- 1 tsp. smoked paprika
- 1 ½ tsp. salt
- ½ tsp. black pepper
- 1 cup Manitoba Harvest Hemp Hearts
- ½ cup water
- 3 tbsp. Manitoba Harvest Hemp Oil
- 3 tbsp. capers
- 2 ½ tbsp. nutritional yeast
- 2 garlic cloves or 2 tsp. garlic powder
- 1 tbsp. Worcestershire sauce
- 1 tsp. Dijon mustard
- 1 tsp. maple syrup
- 1 tsp. salt
- 1 tsp. cracked black pepper
- Juice of 1 lemon
- 6 sliced of baguette, cubed
- 2 tbsp. olive oil
- 1 tsp. salt
- 1 tsp. cracked black pepper
Salad Ingredients:
- 5 – 6 romaine lettuce, chopped
- 1/3 cup capers
- ¼ cup vegan parmesan cheese, finely grated
INSTRUCTIONS
Make the tofu ‘bacon bits’:
- Preheat the oven to 400F and prepare a baking tray with parchment paper.
- Drain the excess water from the tofu package and finely crumble into a medium-sized bowl.
- Add all of the remaining ingredients listed.
- Mix the ingredients together.
- Set onto the prepared tray and bake for 20 - 25 minutes until golden brown. Make sure to flip halfway through.
- Allow to cool, crumble more, and transfer to a bowl.
Make the croutons:
- Preheat the oven to 400F and prepare a baking tray with parchment paper
- Cut the baguette in to sliced, and then cube
- Transfer the baking tray, drizzle the olive oil and season with the salt and cracked black pepper
- Stir to combine the oil and spices
- Bake for 10 – 15 minutes until crunchy and golden brown
- Allow to cool
- Transfer all of the ingredients to a blender
- Blend until smooth
- Adjust seasoning to taste
- Place the lettuce, capers, tofu ‘bacon bits’, and parmesan cheese into a large bowl
- Add your desired amount of salad dressing and toss together
- Add the croutons in at the very end and toss together OR add on top of individual portion after dishing out
Notes:
Salad can be kept in the fridge in an airtight container for 2 – 3 days.
If ingredients are kept separate and salad undressed, ingredients will keep for 5 – 6 days.
