Ingredients
- 4 (5-6 oz) salmon filets
- 1/2 cup grated pecorino or parmesan cheese
- 1/4 cup Organic Hemp Hearts – Manitoba Harvest
- 1 tsp. dried basil
- 1 tsp. dried parsley
- 1-2 tsp. olive oil
- 1 tbsp. lemon juice
- lemon slices, for serving
- sea salt and pepper, for serving
Instructions
- Preheat the oven to 400°. Line baking sheet.
- Add salmon skin side down; rub with olive oil.
- Combine hemp hearts, cheese, basil, parsley, 1 tsp olive oil and lemon juice.
- Cover top of each filet with mixture, pressing to stick.
- Bake for 10-12 minutes until cooked through. Optional broil 2 min for browning.
- Serve with lemon, salt, pepper
