Hemp Crusted Salmon

Ingredients

  • 4 (5-6 oz) salmon filets
  • 1/2 cup grated pecorino or parmesan cheese
  • 1/4 cup Organic Hemp Hearts – Manitoba Harvest
  • 1 tsp. dried basil
  • 1 tsp. dried parsley
  • 1-2 tsp. olive oil
  • 1 tbsp. lemon juice
  • lemon slices, for serving
  • sea salt and pepper, for serving

Instructions

    • Preheat the oven to 400°. Line baking sheet.
    • Add salmon skin side down; rub with olive oil.
    • Combine hemp hearts, cheese, basil, parsley, 1 tsp olive oil and lemon juice.
    • Cover top of each filet with mixture, pressing to stick.
    • Bake for 10-12 minutes until cooked through. Optional broil 2 min for browning.
    • Serve with lemon, salt, pepper
